Marksa, Novosibirsk, 630073, Russian Federation Abstract The process of grinding a bulk food product in a hammer crusher is considered on the assumption that the rotor hammers, in its movement along the circle, form rotating sectors between oneself, dividing the process into grinding zones, and in zones – into steps. In proportion to stepwise crushing, particles in sectors of the mass of mixtures of different densities are created, to which the corresponding fractions of the real dispersed composition are attributed. For modeling purposes, the relationship between the degree of grinding and the density of the mixture in the sector is determined. In dynamics, in the operation of the crusher, the density of the mixture in the sector increases in steps (stepwise) to a maximum and then decreases to zero when the particles exit through the crusher sieve. Thus, a grinding cycle is created for one rotation of the rotor, which is consistent in terms of the duration of the rotation with the number of sectors that make up the structure of the crushing device. Such mathematical modeling forms both the degree of grinding and the mass density at the same time.
