Marksa, Novosibirsk, 630073, Russian Federation Abstract The process of grinding a bulk food product by crushing solid particles in the chamber of the crushing machine A2-SHIM, containing a disk with hammers hung on it (rotor), is considered. The grinding process is theoretically presented in such a way that particles of different sizes are distributed in the working chamber in layers according to the sizes that decrease as being crushed and flow from layer to layer. This idea of the formation of several layers in each rotation of the rotor theoretically shows the sequential process of grinding particles in the crusher. The concept of increasing the volume of the layer with a decrease in the size of the particles (from hammers blows), which hypothetically characterizes the dynamics of changes in the density in the layers, is applied. Graphs of changes in densities and degrees of grinding by layers are plotted. Numerical simulation of the grinding process is considered, a graphical representation of the process is obtained, and a mathematical relationship is found that relates the process parameters to the internal structure of the crusher and its technical characteristics.
